Can somebody weigh in on why some would rather use the STB emulator rather then use regular Kodi? Are there cons when it comes to using Kodi for iptv or what? And also why do people transition from using Kodi to Mags?

The Kodi plugin is just in beta and as far as I know work on it is discontinued. The only thing it can do is "stream a channel". You'll miss out on all the features that would normally be available on a set top box (mag or other).
Mainly the big one is videos on demand, kodi won't do that. VOD brings you more than just movies, including full collections of tv shows spanning back many seasons. It let's you binge watch your favorite episodes. Of course selection varies from provider to provider.
Another big selling point is the epg. For some reason, epg doesn't work properly or only half works depending on your operating system. To get it partially working could take a few hours of trial and error.
Time shifting is another big feature allowing you to watch live tv that aired 4 hours to 2 days prior depending on channel and provider as well.
**All of these features will work out of the box with no cost to yourself. So why would anyone want to pay for a service like ipguys and only use half of it? **
Emulators attempt to install a copy of the mag software on other android devices. For many people it works great, and will see all features. On other devices though it runs slow, laggy, with jittery playback. The Nvidia shield is an example of a 200+ box that cant even emulate properly. So more expensive boxes don't even handle emulators well, which is why people tend to lean towards a proper box made for IPTV
If you are going to get a service that offers a m3u playlist link (apparently some services based on stalker dont offer that), then then Kodi is much better in my opinion than an STB Emulator in my opinion
My current iptv service (ace-iptv) offers m3u playlist, epg guide that works perfectly and also VOD movies and tv shows. And I it's way more faster in Kodi than in any STB Emulator....
I use STB emulator over Kodi for my IPTV Service - works a treat and i find it more stable and far quicker zapping through channel lists
I prefer kodi as complete entertainment center/application and i find stb emulator is sluggish but the problem that some iptv can work with only stb emulator or stalker client pvr in kodi (many bugs) and don't have dedicated kodi addon or has m3u format
