You might wanna look into scheduling recordings through VLC (with your SSTV sub)... It's not ideal but it'd do what you want and it'd be available right after the races!
I know the situation you're into... As a European living in France, 2017 Australian GP's FP1 will be at 2 in the morning... I'll be dead asleep at that time so I'll be recording.
I have seen UK catchup offered via Mag/STBemulator and via Kodi but not via Plex. However it is also not something I have actively looked for.
