Server setup to trim down channel list?

Setup to start:

Server: Windows 10 box, currently running Plex Media Server to serve movies and TV show collection. Since it's connected to the home theater, it also runs Kodi (PlexKodiConnect).

Clients: Kodi (the server one), and an Apple TV 4. Only one ever runs at a time.

I've tried iptvsubs and I'm currently with NecroIPTV. I liked subs' grouping (able to load just English channels was great) and I like Necro's quality so far. Necro's EPG is pretty bare for the US channels, though.

On the Apple TV, I currently have the iPlayTV app setup, which is working fine, except I haven't found group support yet and it's a bit of a hassle to switch from UK to US channels (since I have to go through all of Europe to get there!).

Is there any way to setup a local server to maybe trim down the channel list and/or EPG to just the channels we'd like to watch? Ideally I'd also like to be able to reorganize the groups and channels.

I use https://dvblogic.com/en/dvblink/ with iptvsubs and percdata to create my own back end PVR. Works great. Pretty much looks identical to a STB you would get from a telco provider with all the same functionality (pause/record/etc).

Use xtream-editor.com. You have complete flexibility in re-ordering and grouping your channel. Costs a little but incredibly worth it.
