Looking for the service which provides the most channels in 1080p or higher.

Flawless IPTV has been rock solid for me. They have a ton of channels that are full HD and although I'm not a fan, I always see soccer on. They're UK-based.
I haven't seen any channels higher than 1080i on any provider and I do not think they exist, due to the massive bandwidth that each channel would take up. I use Ace-TV for my back up or when I want to watch 1080i content that my other provider doesn't carry. Ace has 1080 on all Sky and BT channels, with a pretty rock solid stream.

What really matters is fps. You want a source that is at least 50fps for sports like F1 or soccer. I'd suggest Smoothstreams as they always carry premier league games at 720p/60fps and sometimes 1080p/60fps for big matches. All other resellers using Globe & co as sources only have 25fps.
