American: Vaders is by far the best I've tried out of Fab, Ace, WSS, and Epicstreams. They also have about 40 or 50 Italian channels on there (among other countries). For actual picture quality and number of channels, some of the others may slightly beat Vaders, but most of their american lineups are a cluster****
I wouldn't even look at resolution as a benchmark. A quality 720p stream is going to look better than a 1080p stream that's compressed to shit or has buffering issues or is reencoded a few times or upconverted from 720p and reencoded. The only way to really tell is to try a couple of services side by side.
Technically 1080p does not exist for iptv despite what some providers may advertise. Even if it was 1080p, the bitrate would be low. Generally 720p looks much better for sports right now.
Probably the best you will get for english content (usa/canada/uk) that has pretty good picture quality on many stations is epic.
I'm not sure about italian, but I have an Italian friend that uses IPTV I'll try to see what he uses.
It's rare you find 1 server that excels in 2 different areas, and this is probably going to be the case here. Even if you find a good provider that has Italian channels, they will likely be in SD
