All I am subscribed to at the moment just seems to offer 720p

NFL games are not broadcast in 1080p, CBS and NBC does 1080i, FOX and ESPN do 720p.
That's why you won't find a 1080p NFL stream.
No. Best you could get is 1080i/30fps.
I prefer 720p/60fps.
Might want to check hdsports.ca - they had high bitrate/fps streams. Don't know the current situation.
