At the moment I am using a Fire TV stick with Kodi, the wife and kids can't even launch Kodi let alone anything else. Need something more user friendly. Any recommendations folks?

Get a mag box... It's very similar to the cable company ones
Why don't you use perfect player on android or iptv app by Sofronov, but Mag is much better. Kodi just simply SUCK.
Android TV boxes like the mi box and shield TV can make it easier to get Kodi front and center and even auto launch it to make it less steps for them to get to where to go. Also customizing Kodi to help make it easier may be better as well by eliminating options to get confused with. You can modify the fire stick to do things like auto launch Kodi which would make it simpler but none of these things may work if learning something new is too frustrating. It took my wife a while to really start picking up on where to go and what to do with different add-ons and IPTV on my fire box. Especially when it wouldn't show up in the recents menu but she learned and can get to everything she needs when she wants now. With anything if someone isn't willing to learn then go with less sophisticated options like official streaming apps or back to cable. These services are cheaper because they aren't as easy or as reliable as the official sources. You get what you pay for in the end.
My wife has been using kodi almost every day for the last 5 years. She even finds the new add-ons before I do.
What's the problem..?
Appletv + iplaytv (or another iptv app) + m3u8 private list. My wife loves it and enjoy with no problem.
Isn't Kodi listed under "Recent" on your Fire Stick menu?
Perfect Player is very wife and kid friendly once you get it all set up.

Get a mag box (mag, dreamlink , avov). My wife uses avov. avov is android based so you can also have perfect player on it too and kodi and whatever else comes out.

Either mag or dreamlink box. In the long run thats the best way to handle iptv, otherwise you will get the constant “can you help me watch tv” calls and texts 😅😂🙄
