ProgTV for windows freeware version will allow pause/rewind of live streams. Have not tested the paid version which promises scheduled recording.
I use dreamlink t1 plus and i really love it for recording
E2 boxes have record facility just like sly just depends how many connections you take out from your supplier to how many you can record at once think Vader’s offer 5 connections
Tvh server on rp3 works great. Comskip if you want to get nerdy and avoid commercials.
I have a suggestion. Why don't you use an APK like Terrarium TV or Freeflix HQ to watch tv shows? My better half binge watches tv shows all the time using these APK's. No need to record anything, let the internet do it for you.
Only way is either with TVheadend, which is extremely complicated and most service providers will not allow you to use it because of the features it allows, or to get a dreamlink, which has their own issues in themselves.
If this feature is really what you want/NEED, then IPTV is not for you. Most providers have catchup or on demand. You don't need to be able to pause or rewind live tv anymore. That shit is so in the past.
I think you need to have something like MAG,dreamlink, buzz etc to properly record rewind. Other options is setup a Tvheadend which is quite complicated at least for me. Once you do that you can record with Kodi or Plex. Also there are some program like prog TV, iptv extreme, that have record feature.
For me, i just use the catchup feature from the provider in their Kodi plug in.
