How does iptv work?

I'm more interested in the suppliers end and their servers. I subscribe to a service that doesn't let me pick the best server for me like some do. Lots of people have been upset recently bc of endless buffering. Do certain channels use specific servers? I've been trying to map out servers for the service I use. I'll start watching a stream and will follow the ip to ATL. I'll switch stations and see the ip change and now I'm in DC. I've seen one jump out to Colorado. Thanks for the help ahead of time.

It depends is the best answer for you... Source stream can be the issue.. as a provider need a quality. How many restreamers in between the provider and sources also makes a different. Then market. If provider is trying to serve UK and you connect from US then all servers maybe in the EU...then your local ISP performance.. these all add up.
