What happens if I get a subscription with a 2nd provider? Do I get all the channels available from both or do I pick which provider I’m connected to and have to switch back and forth?

To actually answer your question (and not try to sell you a sub), You will have to switch back and forth between addons if you want to watch different channels or if you want to watch the same channel - but from different sources.
One thing that can help you with this is to use Super Favourites. You can made a folder called "Fox Sports 1" and in the folder put a link to FS1 on Sub1 and then also make a link to FS1 on Sub2. Do this for all of your fave channels. This makes it VERY easy to switch between different sources for the same channel if one sub is acting up. You never directly open the addons, you always start with Super Favourites and work from there.
When you select a backup sub, try to get one that is NOT buying streams from the same source.
