Some people like the kodi plugins providers have. Also VOD is a hit or miss on most providers. Should there be something you want to watch that isn't on VOD you could use a kodi add-on to watch it.
I'm similar to you though, I just use IPTV and never Kodi. I'll use an app like terrarium rarely if I really want to watch something not on vod, Netflix etc.
I have paid iptv and terrarium and still use kodi with Gaia etc setup
Well, going the Kodi route gives you access to Gaia, which as already mentioned here craps all over what any IPTV can offer for total/offered content. If you want the highest quality picture/audio feeds, and especially if we are talking about 4k content, then Gaia can't be beat atm. It is pretty much single handedly keeping Kodi relevant and better then just using the growing amount of decent apks out there nowadays like TerrariumTV or MorpheusTV (both which are still better and infinitely more reliable then IPTV VOD). Only downside is you have to have debrid service such as real debrid to get all those better links (totally worth it though imo), and which is going to cost you an extra $4/mo. There is also a new optional service Orion being offered that can dramatically speed up search times as well (bringing it down to only a couple of seconds), even on the slowest devices for that matter, but that costs extra money per/month after 50 daily links as well (costs less then real debrid though).
The better question here is why should you care about IPTV VOD? I honestly can't help but chuckle every time I'm in a discord/telegram chat and see people pop in complaining about how VOD or their one offered link isn't working/updated, and then asking for a ETA on when it might be fixed. Kinda reminds me of the people I see waiting on or taking the bus to go one stop and a short minute walk down the road...all in the name of avoiding a different effort that really isn't any more of an overall hassle.
The z7+ is a great box even if just for iptv. It has great support online. The dreamlink t2 is good box too by the same company. If you want to save a little more I would go with the buzz. If you don't need a dedicated tv app then the mibox would get my vote.
Restaurant (iptv) vs Home made (kodi)
Sometimes i like to use sparkle addon on kodi that able to parse every r/motorsportstreams acestream post and choose to play the highest votes.
And sometimes i just like to watch cooking channel on IPTV.
Get a plex/emby share for vod 5 -10 euro, paunds a month ( netflix, amazon content covered) so works out cheaper i think, depens how you look at it , plus latest movies , myself have a plex share, loads of 4k content , get a iptv 10-15 euro , paunds so 20 -25 euro , paunds a month for everything and forget kodi
Kodi can be hit or miss. Your provider, if they are maintaining the VOD will do so on a regular basis, and you won't have to worry about repos or devs stopping their work, or being arrested. Seriously, fuck Kodi and that community of toxicity, where they don't even support the people who create the addons that they demand to have working every second of every day.
If your provider doesn't support VOD, there are better options than Kodi, like plexshares, embyshares, Terrariumtv, morpheus tv, etc. You want something that always works and you don't have to update constantly.
Because fuck VOD. Using Gaia setup with a debrid service gives every tv show and movie in any resolution you want.
