After running the Helix auto-install script, I now have an "Example" bouquet with thousands of channels. How can I organise these into separate bouquets?

I'm using the Enigma2 H2.h web interface to try and edit the huge bouquet that running the Helix auto-install script has given me. This is what it looks like .

On the left my "channels" are what's coming through my Freeview aerial. On the right I have the "Example" bouquet selected. I want to manually go through and copy channels from that bouquet into a new bouquet (e.g. "Sky Sports" for all those channels). I don't mind doing this manually, but it feels there is no option; either by clicking or drag-n-dropping.

Am I doing this wrong? It seems wrong that only my Freeview channels are listed as channels, whilst all IPTV stuff is stuck in this enormous bouquet.

I know there are other BouquetEditors out there ("DreamEditor") but there's one built into the Enigma2 box... surely we can use that.
