I am using StbEmu on FireTV 4K with Gold TV subscription which I think is only Mac based.
I don’t know how to search or sort items in StbEmu as the fire tv remote doesn’t have any options. Do you use a different app for this?

You'd have to go into the STBemu settings and map keys to the color buttons. Personally I use an aftermarket remote for my shield TV since that also doesn't have enough buttons. Your TV remote, if your TV supports CEC, might have some buttons that can be mapped as well.
