May IPTV provider seems to add new channels all the time but It's hard to know which ones. Is there a simple way to determine this? Seems like there should be. Thanks.

A good responsible provider should have a blog, a webpage, a website ,or as @journeylucid said, a channel where they inform clients of latest updates and changes. If they don't, it wont hurt to suggest the idea to your provider.
If your provider is not notifying you, if you use xtreme-editor and make custom playlist, you would see new channels added at the bottom of each playlist.
My provider has telegram chat for this stuff. They always post the channel list when new channels are added
