Any reseller will be able to see what channel you're watching along with how many concurrent connections you have. And using a VPN would not hide this information, only what IP it is coming from.

The answer is yes but the provider does not care what you are watching or how much you are watching.
Of course they can track user activity. How else are they going to make sure a user stays within their subscription limits like number of streams authorized and how many users are on their servers to ensure reliable streaming. As far as "your" particular viewing habits they could care less. It takes resources to track all of that and what would be the point? Target you with advertisement? Sell your data to an illegal activity? That would be counter-productive so no I wouldn't worry about it.
