I watch a lot of live sports and the ads drive me insane. What’s the best app I can use so that I can delay the stream by a couple minutes and be able to skip ahead when the ads come up. I’ve searched other options on this subreddit and haven’t really been able to make it work. I use an Android TV.

Longer pauses requires your provider offering catchup.

Well, you can't forward on a live program so you will have to watch catch-up on a channel that supports it. You can do that with tivimate, just wait or play it live for a few minutes and play it from start, you'll then be able to skip ads. Better watch with headphones or your neighbours screaming will spoil the game for you.
Most of the key players support catch-up. Sounds like you need a provider that offers it
