As title suggests, without paying for a subscription, is there anyway I can watch Freeview Channels (BBC, ITV etc.) LEGALLY without using the BBC iPlayer or ITV Hub and instead use a direct M3U8 VLC link so I can save them all together as one.

I can't check it myself because access is region locked, but what you could do is open the live stream website in Chrome browser, then open the chrome browser developer tools (F12 or ctrl+shift+i) and in the network tab search for m3u8 (top left input field). Most of the big network companies are using links from akamai that you can just use in VLC player or copy to your M3U.
Other than that you can check out github(dot)com/iptv-org/iptv/tree/master/channels or search the web for "bbc m3u8" and find something like this for example gist.github(dot)com/random-robbie/e56919b5603ecc87af885391e7331657 (don't now if these channels work because region lock)
Get a cheap TV tuner hook your aerial set up a pvr and your good to go
