How does main iptv source work?

I'm curious, about how, the main source manages to have access to all the channels, I thought it connected to the channels that broadcast online, (but I immediately realized that that was impossible), I have also thought that maybe they take the signal via satellite, but they should have an infinity of satellite dishes to catch all the channels.

I have also thought that perhaps they have servers in each country, from there they would take the signal and send it to the main source, but I also see that with a very huge logistics plan.

Can you guys explain me how they do it, I dont need really technical names, just to get the idea (more than the normal people have) of how IPTV works.

There's no single main source. Providers get the channels from different sources, using different methods, depending on the location/availability/needs. They buy or exchange streams which are then restreamed through their servers etc. Some providers can source some of the channels themselves, but it's just not sustainable to source all the channels you need from different markets (US/CA/UK for example)

Satellite/Cable > Cardsharing/IKS > FBC Tuners > Tvheadend or similar software > Server

+ many other sources like: dvb-t/atsc, internet 'go' services: sky go etc.

Even hdmi capture from operator stb is an option where cardsharing is impossible, but that cost a fortune to pay for a multiple sub's:
