Hey guys, I'm looking at getting an IPTV sub over the next few days and would like the opinions of people that know better than I do!
I currently have an Xbox One X, would this be adequate for getting the most out of a subscription or should I bite the bullet and get a NVIDIA Shield Pro? If using the Xbox would be enough, is Kodi the best way to go about getting IPTV on it?

For me Xbox is awful for IPTV. The dedicated apps are trash and I have never managed to successfully get kodi working for IPTV.
If I may suggest to keep costs down but maximizing performance checkout the Chromecast Google TV, with Tivimate installed it's a can't miss.

Shield is really the best service and option if you can afford it.
Get the firestick and tivimate app along with a decent service and you’ll be happy with that set up. Which service were you looking at? I have pretty good service that I can recommend
Nvidia Shield or Shield Pro for sure! Can't beat the quality of craftsmanship and chipset. Don't settle for a cheaper alternative, whether it be the Firestick or Google Chromecast. Not to mention allllll the generic, POS Android TV boxes out there with great specs on paper but absolutely bogus chipsets. I now have three Shield's throughout the house, and one of which I've had since 2016. Get a Shield and you'll be happy for a long time!
You might not even need the shield. Start with a Firestick.
If you just want iptv i go with formuler z8 or dreamlink t3
Try your xbox with Duplex IPTV to see how you get on. Get the Shield if you arent happy with it. Shield will have many more options!
You can run the shield thought the Xbox
Get a Pendoo AllWinner H616 ...u already have a gaming system ...the Shield is a Android /Gaming System...you can cut the price in half by getting a Pendoo Wich has almost the same specs as a Shield with enough memory unlike a Firestick and Ethernet ...unlike a Firestick for smooth IPTV experience
Best thing to do is get an IPTV sub that allows you to use Tivimate and buy a Nvidia Shield or Firestick. You cannot beat Tivimate as an IPTV app and for me personally, the GUI of IPTV is so important for the best experience
