You can hide categories and sort them alphabetically, ascending or descending, but that's it.

Could use m3u4u to create your own playlist or can be done using Tivimate premium

That would be server side you could mark your most used channels as favourites they will then appear in one catagorie

I had the category Movies disappear and I had to update it for the category to return
