Is there a launcher, android image or app I can use that will allow for an easy user interface for grandparents to use?
I'm looking for something that mimics a set top box so the only functionality is being able to change channels if that exists?

Mag box or if using android, stbemu with load at startup option on.
If you want simple, get a mag box, they are not android boxes but they are the best simple iptv box for older generation. Nothing comes even close.
In my opinion IPTV pro it's also quite simple and can setup big tiles for the channels to be easy to use. I use this one for years and prefer it to any other app.
Formuler z8 Pro for the MyTVOnLine2 app. Most cable like experience you’ll ever get. Launcher can automatically launch and connect any app. Suggest use of VPN along with IPTV.
Formuler box with mtol.... Simpler than tivimate
Tivimate... Pop into it's settings and click "boot app on device start" U can also do it from the fire sticks settings,if that's what they have.
You would need some way to access the settings so only changing channels and nothing else might be kind of non functional.
I think Tivimate allow you to set it to open on boot up? So when you wake it up, it will automatically open Tivimate.
