When streaming movies through OTT apps (not live channels), are they streamed as torrents (as in, a VPN would be a good idea?)

I know VPNs are not necessary for live channels, but how about streaming a movie? Does it work like popcorn time where they get streamed as torrents?

No, it has nothing to do with torrents (well they are probably torrenting to get the files originally to their servers).  Your provider will then host all of the VODs he offers.  You are streaming from their servers directly.
