Even the original broadcast has a delay, so all captures from it can't be faster. If everything is good you are around 30 seconds behind, sometimes that can go up to 4-5min.
It's a technology limitation - the signal should be received, transcoded to common formats/codecs like HLS, and then distributed to servers.
The average delay lies between 30s and 2m, so you should consider 1m being the approximate
The minimum restream buffer from a direct source is 30 seconds... So if you watch on the direct source, your iptv feed will be out by 30 seconds... The ones that are 2 minutes behind are rearranged multiple times... With multiple restreams there are multiple error points.
One I have is 30 seconds delay anything over that no good
Yes, tho some will have longer delays than others due to latency to server.
